The actress and founder of Goop recently shared one of her go-to morning treats: gluten-free hotcakes topped with homemade strawberry compote.

Known for her holistic lifestyle and commitment to wellness, Gwyneth keeps her meals simple, nutritious, and full of natural ingredients. While her recipe may seem gourmet, it’s surprisingly easy to prepare. The key? Swapping traditional flour for a blend of coconut and almond flour and finishing with a vibrant compote made from fresh strawberries, often picked straight from her garden.

Gwyneth’s Gluten-Free Hotcakes

Ingredients:

  • ½ cup coconut flour
  • ⅓ cup almond flour
  • 4 organic eggs
  • 1 tbsp coconut oil
  • ⅓ cup milk (coconut or dairy)
  • 1 tsp vanilla extract
  • Pinch of salt
  • 1–2 tbsp organic butter (for cooking)
  • ½ tsp baking powder
  • Maple syrup or honey (optional)

Instructions:

  • In a bowl, whisk together the coconut flour, almond flour, baking powder, and salt.
  • Add the eggs, coconut oil, milk, and vanilla extract. Mix well until the batter is smooth.
  • Heat a non-stick pan over medium heat. Add a small amount of butter and let it melt.
  • Pour batter in small portions into the pan and cook each hotcake until golden on both sides.

Fresh Strawberry Compote

Ingredients:

  • 500 g strawberries (fresh or frozen)
  • 50 g sugar or natural sweetener
  • 65 ml water
  • Juice of half a lime

Instructions:

  • Slice the strawberries and place them in a saucepan with the water, sugar, and lime juice.
  • Cook over medium heat for about 30 minutes, until the strawberries soften and the mixture thickens.
  • Serve warm over hotcakes and finish with a drizzle of maple syrup, if desired.
