We all know the benefits of living an environmentally sustainable lifestyle — from the food we eat to the clothes we wear to the way we travel. This coconut ceviche recipe courtesy of Planta South Beach is a dish that merges the ambrosial taste of the coconut ‘meat’ with the Mexican heat of jalapeños and Anaheim chilis.  Coconut Ceviche by Planta South Beach

 Ingredients:  

1-2 Young Thai Coconut

 Ingredients for Marinade: 

3 shallots, sliced thinly

1 jalapeno, minced

2 tbsp. Anaheim chilis, minced

20 coriander stems

Grey salt, to taste

4 tbs. fresh lime juice

 Preparation:  

- For the marinade, combine thinly sliced shallots, jalapeño, chilis and grey salt until mixture releases its juices.

- Mix in lime juice and coriander.

- Clean and thinly slice young coconut meat, and combine it with two cups of the marinade, a cup of lime juice and a pinch of kosher salt.

- Top with cilantro and corn nuts and add sliced avocado to the plate. Serve with tortilla chips.
