Instead of settling for the classic leftover plate, you can remix the whole feast into something fun, portable, and wildly delicious like turkey empanadas.

You will want cooked turkey, torn or chopped. Any veggies you have around. A little mashed potato to keep the filling creamy. Some gravy for moisture. Cranberry sauce, if you like a tart surprise. And empanada dough, which you can buy pre-made or make.

Building A Filling That Sings

Start by warming a skillet. Add a splash of oil or butter. Toss in onions or leftover roasted vegetables. Add your turkey and let the pan wake it up a bit. Spoon in gravy until everything looks happily coated. If you want a creamy texture, mashed potatoes are your secret weapon. If you crave brightness, cranberry sauce gives the whole thing a fun plot twist.

Seasoning matters. A little cumin or smoked paprika can make the turkey feel worldly. Garlic powder never hurts anyone. Taste as you go.

The Art Of Folding Empanadas

Working with empanada dough feels like crafting edible envelopes. Place a small scoop of filling in the center, fold the dough over, then seal the edges by pressing with a fork. It looks cute and rustic.

Lightly brush the tops with an egg wash so they brown beautifully. Bake them in a hot oven until they puff slightly and turn a warm, toasty color.

Serve them warm. Dip them in leftover gravy, spicy mayo, or even cranberry chutney if you want a sweet savvy moment.
