It's time to bring a taste of Cuba into your kitchen with black beans.
  1. Sauté the Veggies: Heat olive oil in a large skillet over medium heat. Add chopped onion and bell pepper, cooking until softened (about 5-7 minutes). Toss in the minced garlic and cook for another minute until fragrant.
  2. Add the Beans: Pour in the undrained black beans, water, bay leaves, cumin, oregano, and red wine vinegar. Stir everything together.
  3. Simmer Time: Bring the mixture to a boil, then reduce the heat and let it simmer for about 15 minutes. Stir occasionally and add more water if needed to reach your desired consistency.
  4. Season to Taste: Remove the bay leaves. Season with salt and black pepper to your liking.
  5. Serve and Enjoy: Garnish with fresh cilantro if desired. Serve hot over white rice or as a side to your favorite Cuban dishes.
