Ingredients:

  • 1 cup oat flour 
  • 1 large egg
  • 4 egg whites
  • 2 teaspoons baking powder 
  • 1/4 cup vanilla protein powder 
  • 2 tablespoons unsweetened soy milk
  • 1 teaspoon liquid stevia or another sugar-free sweetener
  • (Optional) 1 ripe banana or a few chopped dates for natural sweetness
  • (Optional toppings) berries, sliced almonds, or chia seeds

How to prepare it:

  1. Preheat your oven to 375°F (190°C).
  2. In a mixing bowl, whisk the egg and egg whites until light and foamy.
  3. Fold in the oat flour using a spatula.
  4. Add the soy milk, protein powder, baking powder, and sweetener. Mix until smooth.
  5. Pour the batter into a parchment-lined or greased baking dish.
  6. Bake for 30 minutes, or until a toothpick comes out clean.
  7. Allow the protein cake to cool before serving.
